Classic veggie frittata, use whatever veggies you have on hand.

Recipe Ingredients for Veggie Frittata

8 eggs
1 cup asparagus
1/2 cup broccoli
3/4 cup cheddar cheese
1/4 cup onion
1/2 cup brown mushrooms
1 tablespoon butter

Recipe Directions for Veggie Frittata

Saute veggies in butter, add whipped eggs, add salt and pepper to taste. When partly set top with cheese. Cover or finish off under the broiler.
