Recipe Ingredients for Veggie Frittata

4 cups Spinach
1 tbsp Olive Oil
2 cup Yellow Squash
1/2 medium Orange Hothouse Bell Pepper
1 onion Yellow Onion
1/2 cup, pieces or slices Mushrooms
1/2 cup, pieces or slices Mushrooms
4 extra large Egg, Whole
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Veggie Frittata

  1. Wilt spinach, chop.

  2. Shred squash, thinly slice pepper, onion and mushrooms.

  3. Place all in skillet and cook until reduced by half and all liquid is evaporated.

  4. Stir in spinach and remove from heat.

  5. Beat eggs until foamy; pour over vegetables in skillet.

  6. Cover pan and cook over low heat until eggs are set, 4-5 minutes.

  7. Invert on plate, sprinkle with Parmesan and cut into wedges to serve.
