Wonderful, ungreasy omelet -- perfect fpr lunch

Recipe Ingredients for Veggie Frittata

1 tsp butter
45 g minced onion, chopped (about 1/2 cup)
45 g minced red pepper, chopped (about 1/2 cup)
25 g chopped baby spinach, chopped (about 1/2 cup)
4 ounces mushrooms
300 g eggs (about 5)
2 tbsp cottage cheese
2 tbsp water
2 tbsp parmesan cheese (parmigiano)
1 salt and pepper to taste
45 g canadian bacon, 4 slices

Recipe Directions for Veggie Frittata

  1. Saute veggies in butter

  2. Mix eggs, cottage cheese and cheese

  3. Stir in canadian bacon

  4. Cook as you would for omelet
