This frittata is delicious and nutritious! It also can be easily modified, based upon whatever veggies are in the fridge.

Recipe Ingredients for Veggie Frittata


Ingredients:
1 olive oil spray
2 cloves of garlic, chopped
1 1/2 cups asparagus, cut
1/2 cup sliced summer squash
1 1/2 cups of sliced mushrooms
4 egg whites
2 whole eggs
2 tbsp nonfat milk
1 tsp fresh thyme
4 fresh basil leaves (1 tbsp)
1 tbsp chives
2 wedges of Laughing Cow cheese
1 salt and pepper to taste

Recipe Directions for Veggie Frittata

  1. Turn on the broiler.

  2. Spray oven-proof skillet with olive oil spray (once or twice around entire skillet). Heat skillet over medium heat. Add asparagus, squash, and garlic to skillet, and cook for 5 minutes. Add mushrooms to skillet and cook for another 5 minutes.

  3. Meanwhile, in a large bowl, beat the 6 eggs with the milk. Pour the egg mixture over the vegetables in the skillet and cover with a lid. Cook until almost done (top is still runny).

  4. While the egg mixture is cooking, chop up the thyme, basil, and chives. Slice the cheese wedges thinly. Remove the lid, and spread the chopped herbs evenly over the top of the eggs and vegetables. Repeat this with the slices of cheese.

  5. Place the skillet into the broiler and cook until the top is lightly browned, about 2 minutes.

  6. Remove the skillet from the broiler, and allow to cool 2 minutes before serving.

  7. Cut into 4 wedges and add salt and pepper to taste; makes 4 servings.
