Recipe Ingredients for veggie frittata

1 c ricotta
2 eggs
4 egg whites
1/4 c chicken stock
1 c onion, chopped
1 c sliced green beans, sliced
1 c spinach, chopped
1/4 c carrots, shredded
2 cloves garlic
1/2 t pepper
1/8 t salt
1/3 c cheddar, shredded

Recipe Directions for veggie frittata

  1. In a blender or food processor combine ricotta, eggs, egg white. Puree til very smooth.

  2. In 10" no-stick skillet, bring chicken broth to a boil over med-hi; add onions. Cook 5 min. Add green beans, spinach, carrots, and garlic. Cover and cook 2 min. Add pepper and salt. Stir well. Add egg mixture and cheddar; reduce heat to low. Cover and cook 15 min til eggs are set. Cut into 4 pieces.
