Delicious veggie omelet cooked on stove and finished under broiler, be sure to use a cast iron steel or solid steel

Recipe Ingredients for Veggie Frittata

1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 large Onions
8 large Egg, Whole
2 cup Natural Cheese
3 clove Garlic
3 cup, sliced Squash, Summer, Crookneck And Straightneck
5 tbsp Extra Virgin Olive Oil
3 oz Half and Half
3 tsp Kosher Salt

Recipe Directions for Veggie Frittata

  1. saute onion and pepper in 1 tbsp of evoo, when tender add garlic and squash, cook til tender/browned.

  2. Beat egg with cream and add half of cheese, pour in pan, cook over medium heat pulling in sides until omelet is mostly set.

  3. Sprinkle rest of cheese on top and place under broiler until set fully and browned
