Frittata made with spinach and onions

Recipe Ingredients for veggie frittata

1/4 cup onion, chopped
2 tbsp olive oil
1 1/2 cups spinach, chopped
8 eggs
1/4 cup cheddar cheese, shredded

Recipe Directions for veggie frittata

  1. Preheat oven to 375 degrees.

  2. Heat olive oil in oven safe skillet over medium-high heat. Add chopped onion and saute til translucent. Add chopped spinach and saute briefly until wilted.

  3. In a separate bowl, beat 8 eggs well, then add to pan with onions and spinach. Cook without stirring until slightly set. Sprinkle cheese on top of frittata, then move pan to preheated oven to complete cooking.
