Recipe Ingredients for Veggie Frittata

4 eggs
10 egg whites
1 tsp salt
1/2 cup water
1 cup milk, 2%
1 1/2 cup mushrooms, baby bella, choppped
2 cup zucchini, chopped
1 cup red pepper, chopped
1/2 cup baby spinach, chopped
2 tsp garlic, minced
2 tsp thyme, fresh, chopped
2 tsp scallion, chopped
2 tsp lemon juice
2 tbs parmesean cheese, grated

Recipe Directions for Veggie Frittata

  1. In medium bowl, whisk eggs, whites, salt, water, and milk, set aside.

  2. In saute' pan, saute' mushrooms, zucchini, red pepper, spinach, garlic, thyme and scallions in the lemon juice until tender and no liquid remains.

  3. Remove from heat and mix in the parmesean cheese.

  4. Spray a large non stick frying pan with olive oil.

  5. mix all ingredients together and cook on stove top until mixture starts to solidify.

  6. Place under broiler on low until the eggs solidify completely and all liquid is gone.
