This fritatta is loaded with veggies and the use of fat cottage cheese curd gives you the illusion of having lots of cheese!

Recipe Ingredients for Veggie Fritatta

1/2 white onion
1 cup red pepper
1/2 (52 g) yellow pepper
1/2 (70 g) Orange Hothouse Bell Pepper
1/4 zucchini
5 egg whites
2 whole eggs
1/2 cup 1% milk
1 cup fat free cottage cheese
2 tablespoons sweet chili sauce

Recipe Directions for Veggie Fritatta

  1. Place all veggies in an oven safe dish that has been sprayed with pam

  2. mix egg mixture with milk and whisk until frothy

  3. pour over veggies

  4. season with salt and pepper if desired

  5. pour sweet chili sauce evenly over entire dish

  6. stir

  7. bake in a 375 oven for about 20 minutes

  8. eat warm or cold
