Easy Veggie Fritatta with zucchini, mushrooms, arugula, spinach and onions.

Recipe Ingredients for Veggie Fritatta

4 eggs
1/2 white onion
1/2 zucchini
7 white button mushrooms
1/4 cup baby arugula
1/4 cup shredded mozzarella cheese
1/8 cup frozen spinach
1/2 tbsp extra virgin olive oil
1 tsp ground pepper
1/8 tsp salt

Recipe Directions for Veggie Fritatta

  1. In a medium bowl, whisk all four eggs with half of the salt and pepper until slightly frothy

  2. Set Aside

  3. Set broiler on high

  4. In small, nonstick, ovenproof frying pan, heat oil and sautee onions and mushrooms until tender

  5. Add the rest of the ingredients (except for mozzarella)

  6. When veggies are tender, stir in eggs.

  7. Mix veggies and egg together, so that there is cooked and raw eggs throughout.

  8. When egg is almost completely cooked, but still slightly runny, top with mozzarella

  9. Stick entire pan under broiler for 5 mins, until cheese is slightly browned and bubbly.
