Basic fritata: veggies, turkey bacon, cheese. Super easy breakfast on the go! Make healthier by using only egg whites and leaving out the cheese. :)

Recipe Ingredients for Veggie Fritata

7 eggs
2 small roma tomatoes
1 small zucchini
1 small yellow squash
1/2 cup white onion
1/4 cup skim milk
1 small red potato
1/4 cup parmesan cheese
1/4 cup mozzarella cheese
7 slices turkey bacon

Recipe Directions for Veggie Fritata

Preheat oven to 375. Beat eggs and milk. Saute veggies until tender and mix into egg mixture. Add cheese and salt/pepper to taste. Pour into 24 greased muffin cups. Cook 30ish minutes (until edges are beginning to brown and pull away from sides of cup). Remove from oven and let sit for five minutes or so. Run spatula around edges for easier removal.
