Recipe Ingredients for Veggie friendly tofu and snap peas

14 oz. firm tofu
10 oz. snap peas
3 large carrots
1/4 cup mirin
2 tbsp soy sauce
3 cups vegetable broth
1 1/2 cups water
1 tbsp fresh ginger
1 tsp Sriracha

Recipe Directions for Veggie friendly tofu and snap peas

bring liquids to boil, stir in veggies and tofu and simmer until snap peas are bright green
