1 grain 1/2 oil 1/3 veg 1/6 protein

Recipe Ingredients for veggie fried rice

1/2 cup dry brown rice
1 1/2 tablespoon oil
1/2 cup chopped onion
1/2 cup chopped carrot
1/2 cup frozen corn
1/2 cup frozen peas
1 clove garlic
2 cups water
1 large egg
1/4 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for veggie fried rice

  1. heat oil in a pan, brown the rice.

  2. add onion, carrot, corn, peas and garlic lightly brown.

  3. add water and lid, boil.

  4. cook til done (rice is cooked).

  5. remove lid.

  6. beat egg and add to rice mix, stir in. replace lid. let sit 2-5 min (till the heat cooks the egg).

  7. Add salt and pepper optional.
