Recipe Ingredients for Veggie Fried Rice

1 tablespoon canola oil
2 large eggs, lightly beaten
2 tablespoons sesame oil
1 tablespoon fresh ginger, minced
1/4 cup soy sauce
1 tablespoon honey
1 tablespoon fresh lime juice
1/2 cup diced onion
1/2 cup sliced mushrooms
1/2 cup frozen English peas
1/2 cup diced carrots
1/2 cup broccoli florets
3 cloves garlic, minced
3 cups cooked rice

Recipe Directions for Veggie Fried Rice

  1. Heat canola oil in a large skillet or wok over medium-high heat 1 to 2 minutes; add

  2. eggs, and gently stir 1 minute or until softly scrambled. Remove eggs from skillet; chop.

  3. The original recipe calls for 1 teaspoon Asian chili-garlic sauce and 1/4 cup soy sauce.

  4. To change the flavors to accommodate the Asian BBQ chicken dish flavors, I use a

  5. substitute to flavor the sauce. In a small saucepan, add ginger (minced if you prefer a

  6. stronger flavor or just put it in a garlic press and let the juice squeeze out for a more

  7. subtle flavor), soy sauce, and honey. Warm on low while whisking just until the honey is

  8. mixed through; squeeze lime juice and stir. Set aside until needed.

  9. Heat sesame oil in skillet; add onion and mushrooms, and stir-fry 3 minutes or until

  10. mushrooms are tender. Add peas, carrots, florets, garic; stir-fry 2 minutes or until

  11. vegetables are to preferred tenderness. Add rice and sauce mixture; stir-fry 5 minutes or

  12. until thoroughly heated. Stir in eggs. Garnish, if desired.
