Frittatta with lots of veggies and fat free cheeses

Recipe Ingredients for Veggie & ff cheese frittatta

8 eggs
2 cups zucchini
1/2 cup onion
4 cups swiss chard
1 cup nonfat cottage cheese
1 cup fat free mozzarella cheese
2 tbsp olive oil
2 cloves garlic

Recipe Directions for Veggie & ff cheese frittatta

  1. Heat oil in pan. Sautee onions until golden. Add zucchini and saute until tender. Mince garlic and add to other veggies. Julienne swiss chard and add to pan to wilt.

  2. In separate bowl, mix eggs and cheeses. Pour over veggies.

  3. Put into 400 degree over for about 15 minutes until egg mixture is set.
