Recipe Ingredients for Veggie Espresso Chili

13 Serving Tomatoes
1.5 cup Pinto Beans, Organic
2 tbsp Olive Oil
1.5 cup Beans, Kidney, Red, Mature Seeds
3 medium (2-1/2" dia) Onions
2 tsp Salt, Table
3 tbsp Honey, Strained Or Extracted
2 tsp Domino Light Brown Sugar
3 serving (1 round tsp) Coffee, Instant, Regular, Powder

Recipe Directions for Veggie Espresso Chili

  1. Black Bean Espresso Chili

  3. serves 4

  4. 1/4 cup olive oil (we used half)

  5. 3 onions, chopped

  6. 1/8 cup instant espresso powder

  7. 1/8 cup chili powder

  8. 1/8 cup ground cumin

  9. 1 28-ounce cans crushed tomatoes

  10. 3 tablespoons honey (we also added brown sugar)

  11. 3 large garlic cloves, minced

  12. 6 cups cooked black beans OR mixture of beans OR 3 15-ounce cans of beans

  13. 1 cup water

  14. 1 1/2 teaspoons salt

  15. 1/4 teaspoon chipotle chili powder

  16. Pinch of ground cinnamon

  17. Heat a heavy pot over medium-high heat. Add the oil. Add onions and sauté for about 8 minutes.

  18. Mix in the espresso powder, 1/8 cup chili powder and cook for 1 minute.

  19. Add tomatoes, honey and garlic. Bring to a simmer. Reduce heat to medium-low, cover and simmer for 30 minutes.

  20. Add the beans, 1 cup water, salt, chipotle chili powder and cinnamon. Increase the heat to high and bring to a boil. Reduce heat and simmer, uncovered and stirring often, for about 30 minutes, or until mixture thickens a bit more.

  21. Taste and adjust salt if necessary.
