enchiladas without all the fat and calories

Recipe Ingredients for Veggie enchiladas

1 serving LaPreferida enchilada sauce red
2 serving Blancas Corn Tortillas
2 Veggie Slices
1/3 cup Smart Ground Veggie Protein Crumbles
3 ounces Fresh Chopped Onions

Recipe Directions for Veggie enchiladas

mince onions put yo side, warm smart ground in pan. Lie tortillas in microwave and heat about 20 seconds. Lay the tortillas in small pan sprayed with cooking spray. Spoon meat and onions in tortilla and small amount of the cheese cut up. Spoon 1 TB of sauce in tortilla. Roll tortilla and place seam down in pan. Do the same with the other tortilla. Spoon rest of sauce over rolled tortillas, and top with remaining cheese. Heat in 350 degree oven until cheese is melted and bubbly. Do not over cook.
