Vegetable Enchiladas (1 serving= 1 enchilada)

Recipe Ingredients for Veggie Enchiladas

1 tsp. canola oil
1 onion, finely chopped
3 cloves garlic, minced
3 tbsp. chili powder
2 tsp. cumin
2 tsp. sugar
16 oz tomato sauce (2 8 oz cans)
1/2 cup water
1 Salt and pepper
15 oz. black beans, drained and rinsed
1 tbsp. canola oil
1 cup onion, chopped
1 cup red bell pepper, seeded and chopped fine
8 oz. zucchini, halved lengthwise, seeded and chopped
3 cloves garlic, minced
1 cup feta cheese, finely crumbled
1/2 cup minced fresh cilantro
1/4 cup green chilis, drained & chopped
12 lowfat flour tortillas
1 cup shredded cheese
