Recipe Ingredients for Veggie Egg White Frittata

4 egg whites
1/2 tomato
1/2 cup cucumber slices
1/2 carrot
1/2 tablespoon olive oil
1 tablespoon garlic powder
1 tablespoon italian seasoning
2 tablespoons salsa

Recipe Directions for Veggie Egg White Frittata

Separate 4 egg whites into a bowl and whip until white and frothy. Chop vegetables. Heat 1/2 tablespoon olive oil in a pan on medium heat. Sautee vegetables in oil, garlic powder and Italian seasoning until soft (about 3 minutes.) Pour egg white mixture on veggies and cook until bottom is brown and top is hard. Turn over and cook until other side is brown also (about 2-3 minutes.) Serve with salsa!
