Recipe Ingredients for Veggie Egg Souffle

2 slices light wheat bread
3 tablespoons mushrooms
3 tablespoons chopped onion
1 cup chopped spinach
2 large eggs
2 large egg whites
1/4 teaspoon sea salt
1/4 teaspoon pepper
2 tablespoons low fat cheese

Recipe Directions for Veggie Egg Souffle

  1. Preheat oven to 400 degrees F. Lightly coat 2 oven-safe, 8-ounce ramekins (3 1/2 inches in diameter) with Spectrum butter flavor cooking spray. Cut a circle from each slice of bread and firmly press into bottom of each ramekin and set aside.

  2. Spray Spectrum butter flavor spray on a non-stick pan and saute mushrooms, onion, and spinach until soft and spinach wilted, about 3-5 minutes.

  3. In a medium bowl, whisk together eggs, egg whites, salt, and pepper until thoroughly combined. Stir in cooked vegetables and cheese, and pour equal amounts egg/vege mixture over bread circles into each ramekin. Bake uncovered until a knife inserted into center comes out clean, about 20 minutes. Remove promptly and let sit for 5-10 minutes before serving.
