Veggie Egg Salad Recipe

Egg salad but with some crunchy vegetables thrown in. Shown in the CC Blog, but I added an extra tbsp of yogurt, onion powder and garlic. I also used green onions instead of shallots.

Recipe Ingredients for Veggie Egg Salad

4 boiled eggs
4 boiled egg whites
1/2 c chopped carrots
1/2 c chopped cucumbers
3 chopped green onions
4 tbsp plain fat-free yogurt
3 tbsp low-fat mayonnaise
1/4 tsp pepper
1/8 tsp salt
1/8 tsp onion powder
1/2 tbsp minced garlic

Recipe Directions for Veggie Egg Salad

  1. Boil eggs.

  2. Combine yogurt, mayonnaise, spices and put back in fridge to chill while eggs are boiling.

  3. Chop veggies and combine in a bowl. Set aside.

  4. Peel all eight eggs, discard 4 yolks. Chop/mash until desired consistency.

  5. Combine all ingredients in a large mixing bowl and chill.
