A cheeseless 2 egg omelette with half the yolk, no milk and yummy veggies.

Recipe Ingredients for Veggie Egg Omelette

2 egg whites
1 egg yolk
3 white button mushrooms
2 T chopped bell pepper
1 T chopped onion
3 T steamed spinach
1 T salsa

Recipe Directions for Veggie Egg Omelette

  1. Chops all veggies to preferred sizes.

  2. Steam spinach.

  3. Crack two eggs into bowl, remove one yolk. Whip for a few seconds with a fork.

  4. In a very hot pan, cook your pepper, onion and mushrooms for a few minutes to get them a bit tender. When done place on a seperate plate.

  5. Place your eggs into the hot pan, let them cook enough that the edges are almost done. Add all of your veggies. Allow the egg to cook enough that the top is semi-solid.

  6. Flip.

  7. It only takes a few seconds at this point for the eggs to finish cooking. Slap onto your plate, add some salsa and enjoy!
