Recipe Ingredients for Veggie Egg Casserole

2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 medium (4-1/8" long) Onions, Spring Or Scallions
1/2 cup chopped raw Vidalia Onion
1 cup Broccoli
0.5 cup, pieces or slices Mushrooms
7 large Egg, Whole

Recipe Directions for Veggie Egg Casserole

  1. Chop and mix together desired vegetables

  2. Whisk together 7 eggs

  3. Mix eggs with vegetables

  4. Season as desired

  5. Place mixture in 9 in pie pan and bake at 350 F for around 35 minutes
