Vegetable dump - Farmers Market Fresh vegetables

Recipe Ingredients for Veggie Dump Lentil Soup

3 cups broccoli
1 cup yellow squash
1 cup zucchini
3 cups kale
2 cups diced tomatoes
1/2 cup carrots
3/4 cup eggplant
2 cups green beans
1/3 cup lentils
1/2 cup fava beans

Recipe Directions for Veggie Dump Lentil Soup

  1. Very easy

  2. 1/2 cup Vegetable stock to start

  3. and cut up all the veggies and dump in large stew pot..

  4. Pre-cook the lentils and add later. Measurement of lentils is for the dry bean not cooked (cook 1 cups worth and freeze the remainder)

  5. Fava bean was placed in pan during the simmering. I purchased these beans at Trader Joe's already cooked.

  6. Next time I will add another 1/4 cup of lentils.
