A great blend of vegetables and curry. Serve with naan :) The butter is optional, i'm sure a little oil will work fine.

Recipe Ingredients for Veggie Curry

5 small (1-3/4" to 2-1/2" dia.) Potatoes, Boiled
1 small Onions
1/2 tbsp Minced Garlic
0.33 cup Butter
1 cup (8 fl oz) Soup, Beef Broth, Cubed
0.5 large Squash, Summer, Zucchini, Includes Skin
1 head, medium (5-6" dia) Cauliflower
0.5 small Peppers, Sweet, Red
0.25 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.25 cup Peas, Green
2 tbsp Curry Powder

Recipe Directions for Veggie Curry

  1. In a pan on low heat, cook butter, onions and garlic.

  2. Once the onions are clear, add all vegetables.

  3. Mix beef broth and pour into the pan. Let everything simmer and then add curry powder and 1 teaspoon of tumeric (optional).

  4. Let simmer for at least 10 minutes. Serve on it's own.
