Recipe Ingredients for Veggie Curry with Almond Quinoa

2 tsp olive oil,
2 tbsp yellow onion
1/8 tsp garlic
1/4 c uncooked quinoa
1/4 cup sweet potato
1/4 c cauliflower
1/2 c Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1/4 c diced tomatoes
2 tbsp toasted slivered almonds
2 tbsp vegetable broth
1 pinch salt
1/8 tsp curry powder

Recipe Directions for Veggie Curry with Almond Quinoa

In a sauce pan over medium high heat, heat 1 tsp olive oil. Saute 2 tbsp chopped yellow onion and 1/8 tsp chopped garlic until onion is soft and translucent, 3-5 minutes. Add 3/4 cup water; bring to a boil; add 1/4 c uncooked quinoa. Return to boil; reduce heat, cover and simmer, stirring once or twice, 15 minutes. Remove pan from heat and let sit, covered, 5 minutes. In a medium skillet over medium high heat, heat 1 tsp olive oil. Saute 1/4 c peeled, diced sweet potato, 2 minutes. Reduce heat to medium; add 1/4 c cauliflower florets, 1 thin slice yellow onion and 1/8 tsp curry powder; cook stirring 1 minute, Add 1/2 c low sodium rinsed and drained chickpeas, 1/4 c diced tomatoes, 2 tbsp vegetable broth and a pinch of salt; bring to a boil. cover; reduce heat to low; simmer until veggies are soft, 8-10 minutes. Add 2 tbsp toasted slivered almonds to quinoa; fluff gently with a fork; season with salt and freshly ground black pepper. Sprinkle veggie curry with 3 tsp chopped fresh Italian parsley. serve with quinoa.
