Recipe Ingredients for Veggie Corn Fritters

3 1/2 oz flour
1 tbsp cornflour
2 spring onions, chopped
6 oz sweet corn, off the cob (thawed if frozed)
1 7/10 oz dried tomatoes, drained and roughly chopped
1/4 teaspoon cayenne pepper
3/4 cup water

Recipe Directions for Veggie Corn Fritters

  1. Sift the plain flour and cornflour into a bowl and gradually stir in water. Stir in all remaining ingredients.

  2. Spray a pan with pam. Drop 2 tablespoons of mixture into the pan and flatten slightly with the back of a spoon. Cook for 3/4 minutes on each side until golden brown. Repeat with the remaining mixture until it's all used up.
