Cod loins on a tomato-ey bed of aubergine and mushroom

Recipe Ingredients for Veggie Cod

300 g cod loins
400 g chopped tomatoes
2 small eggplant
1 onion
1 garlic clove
250 g mushrooms (optional)
1/2 teaspoon paprika
1 tablespoon brown sugar
1 salt and pepper

Recipe Directions for Veggie Cod

  1. Chop and fry the onions and mushrooms gently until softening.

  2. Cube the eggplants (aubergines) and add to the onions.

  3. Cover and allow to steam in their own juices until aubergine softens. Stir to avoid sticking.

  4. Add the tomatoes, crushed garlic, paprika and sugar then season with salt and pepper. A finely chopped bird's eye chilli (de-seeded for less heat) can be added if desired.

  5. Cover and cook gently for 10 minutes, stirring often.

  6. Lay the cod loins on the vegetables, cover and cook for 6 - 8 minutes until cod flakes easily with a fork.

  7. Serve the cod on a bed of the vegetables.

  8. Garnish with cherry tomatoes roasted on the vine in the oven for 10 -15 minutes after drizzling with olive oil.
