A vegetarian chow mein free of the chicken broth that sometimes sneaks into restaurant food. Based on a recipe from about.com. I liked it and will be making it again. Get creative: Add fresh peppers, water chestnuts, and/or substitute seitan for tofu.

Recipe Ingredients for Veggie Chow Mein for Slow Cooker

1 pound tofu (cubed)
4 stalks celery (chopped)
3 carrots (finely chopped, diced, or shredded)
1 cup low sodium vegetable broth
1/3 cup soy sauce (low sodium)
1/2 tsp red pepper flakes
1/2 tsp ginger
8 oz. bean sprouts
5 oz. sliced bamboo shoots (drained)
1/4 cup cornstarch
1/3 cup water

Recipe Directions for Veggie Chow Mein for Slow Cooker

  1. Add all to slow cooker and heat on low for 6+ hours.

  2. Whisk starch and water and add to slow cooker. Mix well.

  3. Cook for another 15 minutes, partially covered to allow evaporation and thickening.
