Recipe Ingredients for Veggie Chilli

0.75 cup Kidney Beans
2 large whole (3" dia) Tomatoes, Red, Ripe
0.5 medium (2-1/2" dia) Onions
4 clove Garlic
2 tbsp Vegetable Oil, Canola
2 tsp Cumin Seed
1 tbsp Coriander Seed
0.5 tsp Fennel Seed
1 serving Organic Free Range Low Sodium Chicken Stock
0.5 medium Carrots
1 medium Yellow Hothouse Bell Pepper
3 grams Corn Starch

Recipe Directions for Veggie Chilli

  1. Soak beans overnight if needed.

  2. Diced onions and garlic, fry in 1 Tbsp oil until transluscent. Add rest of oil and spices, fry until fragrant.

  3. Add tomato, chicken stock and beans as well as 2 cups of water. Simmer for 1.5 hours.

  4. Shred carrots and add, simmer for another 30 minutes.

  5. Add bell pepper and cook for another 20 minutes.

  6. Combine starch and 1.5 Tbsp water, mix into chili. Take off stove and serve.
