Veggie Chili Recipe

"chili" made out of veggies only - an attempt to recreate or better the veggie chili I had years ago in college

Recipe Ingredients for Veggie Chili

1 T olive oil
1 c onion
150 g potato
110 g green beans
60 g Shredded Carrots
28 oz With Lime Juice and Cilantro Mexican Festival Diced Tomatoes (Rotel)
14 oz Mild Diced Tomatoes and Green Chilies (Rotel)
1 yellow squash
14 oz black beans
28 oz pinto beans
1/2 c Sliced Portobello Mushrooms Packaged
2 T chili powder
1 T cumin
1 T oregano

Recipe Directions for Veggie Chili

  1. Saute onion in oil until just starting to become translucent

  2. Cube potato in 1/2 cubes and add to onion

  3. Cook for a minute or so

  4. Add chili powder and cumin to pan and stir around, roasting the spices a bit

  5. Add carrots, mushrooms (chopped), and canned tomatoes

  6. Add 1-2 c of water to cover with dehydrated oregano

  7. bring to simmer for 10-15 min

  8. Chop squash into 1/2 to 3/4 chucks and add

  9. Cut or snap green beans into 1/2 to 3/4 inch lengths and add

  10. Cook around 5-10 min longer

  11. Add in rinsed black beans and rinsed pintos and bring to heat

  12. Serving listed is the size of my Calphalon ladle (roughly 3 scoops/1.5 c or 4 scoops/3c container)
