Recipe Ingredients for Veggie Chili

2 tbsp Olive Oil
2 medium (2-1/2" dia) Onions
1 pepper Peppers, Jalapeno
3.5 cup, cubes Squash, Winter, Butternut
3 clove Garlic
32 oz Black Beans Drained and Rinsed
32 oz 365 - White Cannellini Beans
2 cup (8 fl oz) Water
16 oz Diced Tomatoes and Green Chilies
2 tsp Cumin
3 grams Oregano
1 tbsp Chili Powder
1 grams Pepper, Black
3 oz Lime Juice, Canned Or Bottled, Unsweetened
6 leaf Chard, Swiss

Recipe Directions for Veggie Chili

  1. Heat olive oil in a heavy, deep pot. Add onions and jalapeno; cook until softened.

  2. Add squash; cook until barely starting to soften, 8 minutes.

  3. Add garlic; cook 1 minute.

  4. Add beans, broth, tomatoes, poblanos, cumin, oregano, chili powder, salt and pepper to taste.

  5. Cook over low heat until squash is tender and flavors start to come together.

  6. Add greens and lime juice; cook until greens are wilted. Adjust seasoning; stir in fresh cilantro.

  7. Pour into crock pot for 4-6 hours on low setting.
