Recipe Ingredients for Veggie chili

2 tbsp olive oil
2 stalks celery,chopped
1 onion, chopped
1 green pepper, chopped
3 cloves garlic,minced
2 peppers, chipotle, finely chopped
2 tomatoes, sun-dried in oil,finely chopped
28 oz tomatoes, canned, crushed
16 oz beans, black canned
16 oz beans, garbanzo canned
16 oz beans, kidney canned
16 oz beans, white, canned
16 oz beans, red kidney, canned
14 oz broth
2 cups water
1 tbsp chili powder
2 t cumin
1/2 t oregano, dried
1/2 t salt
1/2 t dried thyme
1/2 t red pepper

Recipe Directions for Veggie chili

  1. Heat oil in Dutch oven over medium-high heat: add celery, onion & bell pepper. Cook, stirring, until vegetables soften, about 3 minutes. Add garlic; cook, stirring, 1 minute.

  2. Stir in Chipotle and sun-dried tomatoes, beans, vegetable broth, water, chili powder, cumin, oregano, salt, thyme, red pepper flakes and black pepper to taste. Heat to a boil over medium-high heat; lower heat to a simmer. Cover, cook, stiring ocaisionally, 20 minutes. 324 calories per serving 59 g carbs, 15 g protein, 1510 mg sodium, 18 g fiber.
