Veggie Chili Recipe

Lots of flavor, fiber, and protein. Good cold weather food served with cornbread!

Recipe Ingredients for Veggie Chili

2 cup white kidney beans
1 3/4 cup black beans
1 3/4 cup chili beans
1 3/4 cup pinto beans
1 1/2 cup corn
1 quart tomatoes, stewed
3 bouillon cubes
4 cups water
1 onion, large
2 bell peppers
3 cloves garlic
1 poblano pepper
3 jalapeno peppers
2 tbsp chili pepper
2 tsp cumin
2 tbsp olive oil
2 tsp seasoning salt

Recipe Directions for Veggie Chili

Chop veggies and saute in oil until onions are translucent. Drain and rinse canned beans; add to vegetables. Add water and bouillon cubes. Add tomatoes with juice and season. Stir in corn. Cook two hours or until desired thickness. Adjust seasonings as necessary.
