Veggie Chili Recipe

If I am feeling lazy, I will also throw everything in the crockpot on low for 6 hours. Put the veggies on the bottom. The pinto beans are two 15 ounce can.

Recipe Ingredients for veggie chili

1 tablespoon extra virgin olive oil
2 cups bell peppers, chopped
2 cups chopped mushrooms
1 large onion, chopped
4 stalks celery, chopped
5 garlic cloves
1 tablespoon chili powder
1 tablespoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon salt
30 ounce pinto beans
14 1/2 ounce diced tomatos

Recipe Directions for veggie chili

  1. in large saucepan, heal oil over medium heat, add peppers through garlic. cook stirring until begin to soften. 7 minutes

  2. Add chili powder, oregano, cumin and salt. stirring occassionally for 5 minutes

  3. add beans and tomatoes with their juices. Bring to a gentle simmer stifing accasionsaly. 25-30 minutes
