Vegetable Chili Cook in crock pot .

Recipe Ingredients for Veggie Chili

2 large carrots
2 stalks celery
1 onion
16 oz. mushrooms
2 cups Zucchini
1 cup yellow squash
1 tbsp. chili powder
1 tsp. basil
1 tsp. seasoned pepper
8 oz. tomato sauce
3 cups tomato juice
29 oz. diced tomatoes
15 oz. pinto beans
15 oz. black beans
15 oz. kidney beans
15 oz. great northern beans
1 cup whole kernel corn

Recipe Directions for Veggie Chili

  1. 2 Large carrots

  2. 2 Stalks celery

  3. 1 onion

  4. Combine these, sauté 10 minutes on medium high

  5. 16oz. mushrooms

  6. 2 cups Zucchini

  7. 1 Cup yellow squash

  8. Add and sauté 3 more minutes

  9. 1tbsp. chili powder

  10. 1tsp. basil

  11. 1tsp. seasoned pepper

  12. Add and sauté 5 more minutes

  13. Add all of the above with the following to a slow cooker, cover and cook on low for eight hours.

  14. 8oz. tomato sauce

  15. 3 cups tomato juice

  16. 29oz. diced tomatoes (two 14 ˝ Oz cans)

  17. 15oz. pinto beans

  18. 15oz. black beans

  19. 15oz. kidney beans

  20. 15oz. great northern beans

  21. 1cup frozen whole kernel corn
