Veggie Chili Recipe

surprisingly good healthy veggie chili I adapted from a recipe found in a magazine

Recipe Ingredients for veggie chili

5 1/2 c water
3/4 c bulgur wheat
2 tsp olive oil
1 cup onion
1 cup green pepper
2 tbsp chili powder
2 tsp cumin
2 tsp garlic
20 oz diced tomato and green chilies
15 oz pumpkin
1 cup corn
15 1/2 oz black beans

Recipe Directions for veggie chili

  1. Put 3 c water and bulgur in med microwave safe bowl. Cover and Microwave on high until bulger is tender, about 15 minutes.

  2. Meanwhile, heat oil in large nonstick skillet. Add onion and pepper, saute 5 minutes. Add chili powder, garlic, cumin saute until fragrant.

  3. Add rest of water, tomatoes, pumpkin, corn; bring to a boil over med-high heat. Reduce to simmer 10 minutes, stirring occasionally, until vegetables are tender.

  4. Stir in beans and bulgur; heat through. Remove from heat.

  5. Serve with reduced fat cheese or reduced fat sour cream if desired.
