This is a veggie chili with beans cooked with a little beef broth. The beef broth can be switched out for veggie, of course. Additionally, I used some regular beans and some flavored. In the future I will probably add black beans, garbanzo, or pinto beans.

Recipe Ingredients for Veggie Chili with Beans

28 oz crushed tomatoes
28 oz petite diced tomatoes
28 oz diced tomatoes
1 cup carrot
1 cup celery
1 cup white onion
16 oz light red kidney beans
16 oz dark red kidney beans
16 oz kidney beans
16 oz white beans
2 cups beef broth
2 tbsp chili powder
1/2 tbsp salt
1/2 tbsp pepper

Recipe Directions for Veggie Chili with Beans

  1. Finely chop the carrots, onions, and celery and cook in 2 cups of beef or veggie broth.

  2. Add tomatoes and seasonings

  3. Add beans

  4. Cook for 2-3 hours to taste.

  5. Add water for desired consistency, ie more like soup or more like chili
