Recipe Ingredients for vEGGIE/CHICKEN STIR FRY

3 tbsp LITE SOY SAUCE
1/2 cup CHICKEN BROTH
1 cup BONELESS SKINLESS CHICKEN BREAST
1/4 cup CARROTS
1/2 pound ASPARAGUS
4 GREEN ONIONS, CHOPPED
3 tbsp LEMON JUICE
1/2 cup BEAN SPROUTS
2 tbsp GARLIC
1 COOKING SPRAY
1 tsp CORNSTARCH

Recipe Directions for vEGGIE/CHICKEN STIR FRY

  1. in glass dish, stir together soy sauce, lemon juice and zest, and constarch. Add chicken pieces and coat well with marinade. cover and refrigerate for 15-30 minutes.

  2. Heat oil in large nonstick skillet. Add garlic and fry till softened. Resering the marinade, add chicken and veggies saving green onions for last. stir-fry for 4-6 minutes, untill chicken is no longer pink.

  3. add marinade and chicken broth and cook till sauce is slightly thickened, about 1-2 minutes.
