A modified egg omlette using left over veggies from last night's dinner.

Recipe Ingredients for Veggie and Cheese Omlette

1 egg white
1 egg
1/4 cup mozzarella cheese, shredded
1/2 cup frozen mixed vegetables, steamed
1 serving Pam cooking spray

Recipe Directions for Veggie and Cheese Omlette

  1. Spray pan lightly with Pam.

  2. Add veggies till warm and set aside.

  3. Scramble eggs and cook till almost done. Add veggies and top with cheese.

  4. Fold omlette in half and set aside, covered, till cheese melts.

  5. Enjoy.
