Veggie and Cheese Crustless Quiche

Recipe Ingredients for Veggie and Cheese Crustless Quiche

1 eggs
1 cup plain soy milk
1 cup Smart Balance Butter
1 cup grated cheddar cheese
1 cup chopped broccoli
1 cup chopped red bell pepper
1 cup chopped red onion
1 cup chopped green bell pepper
1 cup chopped tomato
1 cup baby spinach leaves
1 tsp salt

Recipe Directions for Veggie and Cheese Crustless Quiche

  1. Preheat oven to 350 degrees.

  2. In seasoned cast iron pan, sprinkle some cheese on the bottom. Then mix all other ingredients in a bowl.

  3. Bake at 350 for 40 minutes or until center has risen and is slightly golden. Knife should come out clean.
