A delicious omelette that is hearty enough to keep you going most of the day.

Recipe Ingredients for Veggie & Chedder Omelette

1 tsp olive oil
1/3 cup onions, chopped
1/3 cup yellow bell peppers, chopped
1/2 cup cherry tomatoes, quartered
3 whole eggs, beaten
1 1/2 tbsp chedder cheese, shredded

Recipe Directions for Veggie & Chedder Omelette

  1. Sautee the onions and peppers in heated olive oil.

  2. Meanwhile, crack eggs into separate bowl, add salt & pepper to taste, and beat with a fork.

  3. When the onions and peppers are almost done sauteeing, add the cherry tomatoes to warm & soften them.

  4. Add the beaten eggs to the veggies mixture. Allow the eggs to begin firming, lifting sides and tilting pan to get as much of the egg cooked as possible.

  5. When the eggs are almost set, sprinkle the cheese on top and allow it to melt slightly.

  6. Transfer the omelette to a plate, carefully folding one half over the other with the cheese inside.
