1/4 cup black beans
1/2 cup brown rice
1/4 cup diced canned tomatoes
1/4 cup canned corn
1/2 cup shredded cheese
1 cup enchilada sauce
1 tortilla

Recipe Directions for Veggie Burrito

  1. Cook brown rice.

  2. Mix tomatoes, corn and black beans.

  3. Put rice and veggies in tortilla.

  4. Sprinkle shredded cheese.

  5. Cover in enchilada sauce.

  6. Bake uncovered for 20 mins.
