Delicious, easy way to get kids (big and small) to eat their veggies.

Recipe Ingredients for Veggie burgers.

1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Carrots
3 oz Tofu, Firm
1 medium (2-1/2" dia) Onions
1 medium Egg, Whole
0.5 cup Yellow Corn Meal Plain
1 tbsp Olive Oil

Recipe Directions for Veggie burgers.

  1. Grate or finely chop all ingredients.

  2. In a large bowl mix together with eggs and corn meal.

  3. In a hot frying pan add olive oil.

  4. Make ingredients into hand size patties.

  5. Fry on both sides until lightly golden.

  6. Serve between toasted bread with either mayonnaise or sweet chilli sauce.
