Recipe Ingredients for Veggie burgers

1 ounce olive oil
5 tablespoons diced red onion
5 tablespoons diced black olives
5 tablespoons diced red bell peppers
1 1/2 teaspoon diced jalapeno
3 cloves garlic
1 artichoke heart
15 oz. black beans
15 oz. chickpeas
15 oz. white beans
12 ounces rolled oats
1 teaspoon paprika
1 teaspoon chili powder
2 teaspoons dried oregano
2 tablespoon parsley leaves
1 teaspoon ground cumin
1 teaspoon celery salt
1 teaspoon ground sage
4 tablespoons of potato flakes (may use seasoned bread crumbs)
2 eggs

Recipe Directions for Veggie burgers

  1. In a medium saute pan over medium heat, add 1-ounce olive oil and all raw vegetables except beans. Saute until translucent. Remove and cool.

  2. Run oats through food processor and remove. Add veggies to beans and mix thoroughly-add to food processor and pulse until beans are mostly a paste.

  3. Mix all dry ingredients along with the egg-stir in bean mixture. With a potato masher, mash beans to desired consistency. Thoroughly mix all ingredients and form into 8 patties by lining a bowl with plastic wrap and adding a ball of the mixture. Form into patty of desired thickness, bringing wrap over top of patty and dump bowl to remove. Refrigerate for 30 minutes or may freeze.

  4. In saute pan add 1-ounce olive oil, and cook patties 2 to 3 minutes per side.
