Veggie Burger - Vegan/Gluten Free

Recipe Ingredients for Veggie Burger - Vegan/Gluten Free

2 cup Rice, Brown, Medium-grain, Cooked
2 medium (2" dia, 5" long, raw) Sweetpotato
0.5 cup Corn, Sweet, Yellow
1 Potato large (3" to 4-1/4" dia) Potato, Flesh And Skin
1 cup, chopped Carrots
3 tbsp Flaxseed Meal
0.33 cup Olive Oil
2 oz Walnut Halves
1 medium (2-1/2" dia) Onions

Recipe Directions for Veggie Burger - Vegan/Gluten Free

  1. Mix flaxseed meal with 9 Tbs water. Let sit for 10 minutes to gel. (This replaces egg to hold it all together.)

  2. Cook rice and veges separately. Chill well. [This works best with leftovers.]

  3. You can substitute pecans or sunflower nuts for the walnuts ? basically anything protein that crunches. You can also add chickpeas OR any cooked white bean.

  4. Run veggies through a food processor then mix with cooked rice.

  5. Add flaxseed gel to bind.

  6. Form into patties and freeze on wax paper.

  7. Cook later as you would any frozen vege burger, lightly sautéing in 1 Tbs olive oil. [The oil listed is to cook all 12 burgers individually....]
