Better than any vegetarian burger available in the supermarket.

Recipe Ingredients for Veggie Burger from Cook's magazine

3/4 cup wheat berries
3/4 cup lentils
6 1/2 cups crimini mushrooms
2 cups chopped onions
1/3 cup light mayo
2 cups breadcrumbs
1 cup cashews

Recipe Directions for Veggie Burger from Cook's magazine

  1. See Cook's magazine for complete directions.

  2. Cook lentils, drain, dry on paper towels.

  3. Add bulger to boiling water, set aside for 20 minutes, drain, press out water.

  4. Cook onions until browned. Cook mushrooms - 8 - 12 minutes, until browned.

  5. Chop cashews in processor just until about the size of 1/6 of grain of rice.

  6. add to all the rest of ingredients, except mayo & breadcrumbs (Panko style is preferred, other OK)

  7. Process in batches until it holds together.

  8. Add breadcrumbs, mayo, mix by hand. Form into 12 patties, about 4 inches across.
