A middle-eastern inspired dish. Bulgur is very high in fiber, has a decent amount of protein, and is very tasty and good for you.

Recipe Ingredients for Veggie Bulgur Pilaf

1 tbsp vegetable oil
1 cup onions, diced
2 green peppers
1 yellow bell pepper
1 cup canned crushed tomatoes
4 cups raw eggplant, diced
1 1/2 cups bulgur, raw
3 cups water
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes

Recipe Directions for Veggie Bulgur Pilaf

  1. Saute onions in oil, add peppers and then eggplants.

  2. Add tomatoes and cook on slow heat, covered, until eggplants become tender, about 10 minutes.

  3. Add spices, bulgur, and water.

  4. Cook for about 15-20 minutes, until the bulgur absorbs all water and is soft.
