Recipe Ingredients for Veggie Brownies

3 oz bittersweet chocolate, (or semisweet) add 3 tbsp sugar if using unsweetened choc
1 cup carrots, pureed makes 1/2 cup
4 cups raw spinach, pureed makes 1/2 cup
1/2 cup brown sugar, firmly packed
1/4 cup unsweetened cocoa powder
1 tbsp salted butter
1 tbsp applesauce
2 tsp pure vanilla extract
3 large egg whites
3/8 cup almond meal
1/4 cup whole wheat pastry flour
2 tbsp wheat germ
3/4 tsp baking powder

Recipe Directions for Veggie Brownies

  1. Preheat the oven to 350/180c degrees. Coat an 8"x8"; (20cm x 20cm) baking pan with cooking spray or line with baking paper.

  2. Steam the veggies (carrots approximately 10 minutes, spinach approximately 30 sec-1 min until wilted and bright green), and puree them in a food processor or blender.

  3. Melt the chocolate and butter in a double boiler or in microwave on low power.

  4. In a large bowl, combine the melted chocolate/butter, vegetable purees, sugar, applesauce and vanilla and whisk until smooth and creamy, 1 to 2 minutes.

  5. Whisk in egg whites.

  6. Combine cocoa powder, almond meal flour, whole wheat pastry flour, wheat germ, and baking powder, and add gradually to the wet mixture with a wooden spoon.

  7. Pour the batter into the pan and bake 35 to 40 minutes. Cut into 16 bars.
