Recipe Ingredients for Veggie Breakfast Scramble

2 eggs
2 egg whites
2 tbs water
2 tbs Parmesan cheese, grated
6 mushrooms, diced
4 tbs red bell pepper, diced
2/3 cup spinach, chopped
1 Roma tomato, diced
6 basil leaves, minced
1 tsp olive oil
1 tbs garlic, minced

Recipe Directions for Veggie Breakfast Scramble

  1. Whisk together eggs, egg whites, water, and Parmesan cheese.

  2. In saute pan, heat olive oil and saute garlic for 1 minute over medium heat.

  3. Add all vegetables and saute for 2-3 minutes.

  4. Add egg mixture and basil to veggies. Continue cooking over medium heat, stirring frequently, until eggs are cooked through and fluffy. Covering between stirring will help eggs to be fluffier.
